Ingredients:

  • 1/2 kg beef ribs
  • 1/4 kg beef offals (including tripe and tendon)
  • 1 packet instant gulai seasoning mix
  • Fried shallots, to taste
  • 1 small can of Kara coconut milk
  • Spice Paste:
    • 7 shallots
    • 4 cloves garlic
    • 1 stalk lemongrass, smashed
    • 1 thumb-sized piece of galangal, smashed
    • 3 bay leaves
    • 15 small chilies
    • 5 red chilies
    • 1 thumb-sized piece of turmeric
    • 1 thumb-sized piece of ginger, smashed

Instructions:

  1. Prepare the Meat:

    • Begin by boiling the beef ribs and offals in water for 30 minutes, or until tender. This step helps to soften the meat and remove impurities.
  2. Make the Spice Paste:

    • Blend the shallots, garlic, lemongrass, galangal, small chilies, red chilies, turmeric, and ginger into a smooth paste. This mixture forms the aromatic base of your gulai.
  3. Cook the Spice Paste:

    • Heat a little oil in a pan and sauté the spice paste along with the instant gulai seasoning mix until fragrant and the oil starts to separate from the paste. This step is crucial for developing deep, rich flavors.
