Bubur Ayam Mantap (Delicious Chicken Congee)

Ingredients:

For the Chicken:

  • 1/2 kg Chicken Breast (boiled for broth and then fried with a pinch of salt, shredded)
  • 2 liters Water (for boiling the chicken)

For the Congee (using a rice cooker):

  • 3 cups Rice (cleaned)
  • 500 ml Chicken Broth
  • 200 ml Thin Coconut Milk
  • 2 tablespoons Salt
  • 2 Bay Leaves
  • 1 bundle Pandan Leaves

  • 9 Shallots
  • 5 Garlic Cloves
  • 1 tablespoon Coriander Seeds
  • 3 Candlenuts
  • 7 cm Turmeric
  • 5 cm Ginger (bruised)
  • 2 Lemongrass Stalks (bruised)
  • 3 cm Galangal (bruised)
  • 2 Kaffir Lime Leaves
  • 2 Bay Leaves
  • Chicken Bouillon Powder
  • Ground Pepper
  • Salt

For Garnishing:

  • Sliced Green Onions
  • Fried Shallots
  • Crackers

Instructions:

  1. Prepare the Rice Congee:

    • In a rice cooker, combine the cleaned rice, chicken broth, thin coconut milk, salt, bay leaves, and pandan leaves.
    • Cook the mixture while stirring occasionally until the rice turns into a thick porridge consistency. This may take about an hour.
  2. Prepare the Broth:

    • In a pan, sauté the shallots, garlic, coriander seeds, candlenuts, and turmeric until fragrant.
    • Add the sautéed spices into 1.5 liters of chicken broth.
    • Add the ginger, lemongrass, galangal, kaffir lime leaves, bay leaves, chicken bouillon powder, ground pepper, and salt to the broth.
    • Let it simmer for about 20 minutes. Taste and adjust the seasoning as necessary.
