REAL Italian Bolognese Sauce Recipe

Ingredients:

  • 1/4 lb bacon, lean
  • 1 large onion
  • 1 stalk celery
  • 1 large carrot
  • 1 clove garlic
  • 4 tbsp butter
  • 3 tbsp olive oil
  • 1/2 – 3/4 cup dry white wine
  • 1 lb lean ground beef
  • 1 lb ground pork
  • 1 cup consomme
  • 1 can (28 oz) crushed tomatoes
  • 1/2 tsp salt
  • 1 – 1 1/2 tsp black pepper, freshly ground
  • 1/2 tsp rubbed sage
  • 1/4 tsp oregano
  • 1/4 tsp red pepper flakes
  • 1/4 tsp nutmeg
  • 1 cup milk
  • 1 lb penne pasta, cooked

Instructions:

  1. In a Dutch oven or medium-sized pot, heat butter and olive oil over medium heat until the butter begins to froth.

  2. Add chopped bacon, onion, celery, carrot, and garlic. Cook until the onions are translucent, about 8 to 10 minutes.

  3. Remove the bacon pieces and excess fat from the pot. Chop the lean portions of bacon into small pieces and return them to the pot.

  4. Add the lean ground beef and ground pork to the pot. Cook until the meat loses its red, raw color, breaking it up with a spoon as it cooks.

  5. Increase the heat to medium-high and add the dry white wine and consomme. Cook the sauce until most of the liquid has evaporated.

  6. Reduce the heat to low and simmer the sauce. Add oregano, salt, black pepper, rubbed sage, red pepper flakes, and nutmeg. Let it simmer for about 20 minutes.

  7. Add the crushed tomatoes to the pot and bring the mixture to a boil. Once boiling, reduce the heat to low and let the sauce simmer (very slowly), partially covered, for about 2 to 4 hours, stirring occasionally to prevent sticking. The longer it simmers, the more flavorful it will become.

  8. About 5 to 10 minutes before serving, stir in the milk. This addition adds a creamy richness to the sauce.

  9. Serve the Bolognese sauce over cooked penne pasta or your favorite pasta variety. Garnish with freshly grated Parmesan cheese, if desired.

  10. The remaining sauce can be frozen for up to two months for future use. Simply thaw and reheat gently before serving.
