Ingredients:

  • 1 boneless pork roast
  • 1 cup dried pinto beans
  • 4 cups water
  • 3 garlic cloves

  • 5 tsp dried oregano

  • 1/2 – 1 tsp cayenne pepper (adjust to taste)
  • 1 can whole tomatoes
  • 1 can diced green chilies
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 24 – 36 flour tortillas
  • Cheese (for topping)
  • Onion (for topping)
  • Salsa (for topping)
  • Sour cream (for topping)
  • Lettuce (for topping)
  • Tomatoes (for topping)

Instructions:

  1. Preheat Oven: Start by preheating your oven to 250°F (120°C).
  2. Prepare Dutch Oven: Place the boneless pork roast in a large Dutch oven.
  3. Combine Ingredients: Add the dried pinto beans, water, garlic cloves, cumin seeds, chili powder, dried oregano, ground coriander, cayenne pepper, whole tomatoes, diced green chilies, salt, and black pepper to the Dutch oven. Stir well to ensure all ingredients are thoroughly mixed.
  4. Bake: Cover the Dutch oven and bake in the preheated oven for 7-8 hours or until the beans are tender. You can even leave it to cook overnight for added convenience. Keep an eye on it and add more water if the mixture becomes too dry.
  5. Shred Meat: Once cooked, remove the meat from the pan and shred it into bite-size pieces. Alternatively, you can simply stir the mixture well to break up the meat.
  6. Return Meat to Pan: Return the shredded meat to the pan and stir until it reaches the consistency of chili.
