🍌🍞 Favorite Banana Bread Recipe 🍞🍌

Description: This cherished banana bread recipe has been a staple in my kitchen since it graced the pages of Family Circle magazine back in 1988. Over the years, I’ve lovingly baked it 3-4 times annually, especially during the festive Christmas season, where it’s become a sought-after gift among my coworkers. πŸŽ„πŸ’Ό

Cook Time: 1 hour 20 minutes
Prep Time: 15 minutes
Total Time: 1 hour 35 minutes

Servings: 14 slices

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas
  • 1/2 cup milk
  • 1 cup chopped pecans or walnuts, divided

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit. Grease and flour a 9x5x3 inch loaf pan.
  2. Combine flour, baking soda, baking powder, and salt in a medium-sized bowl.
  3. In a separate bowl, beat together butter and sugar until light and fluffy. Then, beat in eggs, one at a time.
  4. Stir in vanilla extract, then gradually add the flour mixture to the wet ingredients, alternating with mashed bananas and milk.
  5. Fold in 2/3 cup of chopped nuts, ensuring they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan, spreading it out evenly.
  7. Sprinkle the remaining chopped nuts over the top of the batter for an added crunch.
  8. Bake for 1 hour and 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan on a wire rack for 10 minutes.
  10. Carefully loosen the edges of the bread from the pan with a knife, then transfer the loaf to a wire rack to cool completely.
  11. Once cooled, wrap the banana bread tightly and store it at room temperature.
  12. Tip: Ensure your bananas are ripe for the best flavor and texture. The riper the bananas, the moister the bread will be.
  13. Bonus: This banana bread actually tastes even better the next day, as the flavors meld together.
  14. Freezing: If you have leftovers or want to make a batch ahead of time, this banana bread freezes exceptionally well for up to 6 months.
