Ingredients:
- 26 butter cookies, crushed
- 4 tablespoons butter, melted
- 4 eggs
- 1/2 teaspoon vanilla extract
- 4 packages (8 ounces each) cream cheese, softened
- 1 cup sugar
- 1 tablespoon all-purpose flour
- Zest of 3 lemons
- 2 tablespoons lemon juice
- 1 cup sour cream
Instructions:
1. Preheat the Oven:
- Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius).
2. Prepare the Crust:
- In a bowl, mix together the crushed butter cookies with 3 tablespoons of melted butter until well combined.
- Use the remaining melted butter to brush the bottom and sides of a springform pan.
- Press the cookie mixture evenly onto the bottom of the pan to form the crust.
- Bake the crust for 8 minutes in the preheated oven.
3. Prepare the Filling:
- In a small bowl, lightly beat the eggs with the vanilla extract, then set aside.

- A slight crack on the top indicates that the cheesecake is done.
5. Cool and Refrigerate:
- Allow the cheesecake to cool completely in the pan on a wire rack.
- Once cooled, carefully remove the sides of the springform pan.
- Refrigerate the cheesecake for at least four hours, or preferably overnight, to allow it to set and chill thoroughly.
