Ingredients:
- 1 1/4 cups quick-cooking oats
- 1/2 cup brown sugar
- 1/4 cup shredded coconut
- 2/3 cup chocolate chips
- 2/3 cup peanut butter chips
- 1 1/2 tablespoons corn syrup
- 1 1/2 tablespoons liquid honey
- 3 tablespoons peanut butter
- 3 tablespoons water
- 2 teaspoons vanilla extract
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare Pan: Spray an 8-inch square pan with cooking spray, ensuring even coverage to prevent sticking.
- Combine Ingredients: In a large mixing bowl, combine the quick-cooking oats, brown sugar, shredded coconut, chocolate chips, peanut butter chips, corn syrup, liquid honey, peanut butter, water, and vanilla extract. Stir until all ingredients are well combined and evenly distributed.
- Press Into Pan: Transfer the mixture into the prepared pan, using a spatula or the back of a spoon to press it evenly into the pan.
- Bake: Place the pan in the center of the preheated oven and bake for 20 to 25 minutes, or until the top is golden brown and the bars appear firm.
- Cool: Once baked, remove the pan from the oven and place it on a wire rack to cool completely. Allowing the bars to cool ensures they set properly.
- Cut Into Bars: Once cooled, use a sharp knife to cut the granola mixture into individual bars. You can cut them into squares or rectangles, depending on your preference.
- Serve or Store: Serve the granola bars immediately, or store them in an airtight container for later enjoyment. These bars can be kept at room temperature for several days or refrigerated for longer shelf life.
Tips:
- For added flavor and crunch, toast the oats and shredded coconut in the oven for a few minutes before mixing them with the other ingredients.
- Customize your granola bars by adding your favorite nuts, seeds, or dried fruits to the mixture.
- To make the bars gluten-free, ensure that all ingredients used are certified gluten-free.
- Wrap individual bars in parchment paper or plastic wrap for convenient grab-and-go snacks.
- Experiment with different combinations of chocolate and peanut butter chips for variety.
Enjoy the wholesome goodness of these Peanut Butter & Chocolate Chip Granola Bars for breakfast, snacks, or anytime cravings strike!
