Instructions:

Make the Caramel:
- Melt the butter or margarine in a small saucepan.
- Add brown sugar, sugar, corn syrup, and evaporated milk. (Cream or whole milk can be used as a substitute for evaporated milk).
- Cook on medium-high heat until the mixture reaches 244°F. This may take some time.
- Remove from heat, stir in vanilla, and set aside.

Prepare the Marshmallow Base:
- Place egg whites in a large mixing bowl and prepare the electric mixer.
- Ensure both the beaters and mixing bowl are completely dry.
- In a 2-quart saucepan, combine sugar, corn syrup, and water. Mix well before heating.
- Cook over medium heat, without stirring, until the mixture reaches 250°F. Remove from heat.
- Quickly beat egg whites with a mixer until peaks form (about 1 minute).
- Gradually pour the hot mixture into the egg whites while beating on high for about 3 minutes.
- Continue beating for 1-2 minutes longer. Reserve 1 cup of the mixture for the peanut butter top.

Prepare the Chocolate Marshmallow Mixture:
- Melt 12 oz. of chocolate chips in a glass bowl in the microwave, stirring every 30 seconds until melted.
- Pour melted chocolate into the large bowl of marshmallow base and fold carefully until thoroughly combined.
- Let the mixture sit for ten minutes.

Make the Peanut Butter Top:
- Mix 2 cups of reserved marshmallow base with 1 1/2 cups of peanut butter until thoroughly combined.

Form the Candy Bars:
- Line cookie sheets with wax paper or plastic wrap.
- Form the chocolate marshmallow mixture into walnut-sized balls, then flatten them into logs on the cookie sheets.
- Place cookie sheets in the freezer for ten minutes.
- Spread reserved caramel mixture on top of each candy bar.
- Shape peanut butter marshmallow mixture and place it on top of the caramel.
- Return candy bars to the freezer for ten more minutes.

- Melt the remaining chocolate chips using the same method as before.
- Coat individual candy bars with chocolate by dipping or spreading it with a knife.
- Return bars to the freezer until the chocolate is firm.
