Perogies With Various Traditional Fillings

Description:

What can I say, I love these little babies and they love me back, so I only do this twice a year and “ration” them out! I make double to triple the amounts and freeze for later use. To serve boil, drain and then fry in butter with a lot of onions and serve with a dollop of sour cream!

Ingredients:

Quantity Ingredient
3 cups flour
1 egg
2 teaspoons salt
1 cup water
3/4 – 1 cup dry curd cottage cheese
1 egg
5 cups sharp cheddar cheese
1 tablespoon fresh dill
6 – 8 strips bacon
1 cup sauerkraut
1 teaspoon salt
1 cup mashed potatoes
1/2 – 1 onion
4 tablespoons butter
1 cup sour cream

Instructions:

  1. Prepare the Dough:

    • Mix egg, oil, and water in a bowl.
    • Add flour and salt, knead until elastic.
    • Flour your counter top and rolling pin.
    • Roll the dough to around 1/4 inch thick and cut into small circles.
  2. Prepare the Fillings:

    • Cottage Cheese and Dill Filling:
      • In a large bowl, mix dry curd cottage cheese, egg, sharp cheddar cheese, fresh dill, and salt.
      • Fill perogies with the mixture.
    • Sauerkraut and Bacon Filling:
      • In a large bowl, combine sauerkraut, cooked and crumbled bacon, and salt.
      • Fill perogie dough with the mixture.
    • Potato and Cheese Filling:
      • In a large bowl, mix mashed potatoes, sharp cheddar cheese, chopped onion, and salt.
      • Fill perogie dough with the mixture.
  3. Assembly and Cooking:

    • Stretch dough circles with fingers, add 1 teaspoon of filling, fold over, and flute edges.
    • Boil perogies until they float.
    • Cool before freezing.
  4. Serving:

    • To serve, boil, drain, then fry in butter with onions.
    • Serve with a dollop of sour cream.

Additional Notes:

  • The dough recipe is for around 50 perogies.
  • Prepare at least 1 batch of dough for each filling.
  • It’s recommended to triple each filling recipe.
  • You may need about 1 and 1/2 recipes of dough for each batch of filling, depending on dough thickness.
