Ingredients:

  • 1/3 cup sugar
  • 2 sticks of butter
  • 1 tablespoon margarine
  • 4 eggs
  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 1 1/2 cups black walnuts
  • 2 teaspoons vanilla extract
  • 1 cup miniature marshmallows
  • 1/4 cup butter
  • 1/3 cup margarine
  • 1/3 cup half-and-half
  • 3/4 cup evaporated milk
  • 1 cup powdered sugar
  • 2/3 teaspoon salt
  • 1/2 cup sugar
  • 2 cups milk
  • 2 tablespoons baking chocolate

Instructions:

  1. Brownies:

    • In a saucepan, melt the butter, cocoa, and sugar together until smooth and well combined.
    • Beat in the eggs, one at a time, ensuring each is fully incorporated.
    • Gradually blend in the flour, salt, and vanilla extract until a smooth batter forms.
    • Gently fold in the black walnuts until evenly distributed throughout the batter.
    • Preheat your oven to 350°F (175°C). Grease a 12 x 15 jelly roll pan.
    • Pour the batter into the prepared pan and spread it evenly.
    • Bake in the preheated oven for 25 minutes or until a toothpick inserted into the center comes out clean.
  2. Marshmallow Topping:

    • Immediately upon removing the brownies from the oven, sprinkle the miniature marshmallows over the hot surface, covering it completely.
    • Return the pan to the oven and bake for an additional few minutes until the marshmallows are soft and slightly melted, but not browned.
  3. Frosting #1:

    • In a mixing bowl, combine the 1/4 cup of butter, 1/3 cup of margarine, half-and-half, powdered sugar, and salt until smooth and creamy.
    • Once the brownies have cooled slightly, spread this frosting evenly over the marshmallow layer.
    • Allow the brownies to set for at least 12 hours to allow the flavors to meld and the frosting to set.
  4. Frosting #2:

    • In a saucepan, combine the 1/2 cup of sugar, milk, 1/3 cup of butter, and baking chocolate.
    • Cook over medium heat, stirring constantly, until the mixture reaches the softball stage (approximately 235°F or 118°C).
    • Immediately pour the hot frosting over the marshmallow layer, spreading it evenly with a spatula.
    • Allow the frosting to set completely before cutting the brownies into squares.

Enjoy your Rocky Mountain Brownies! These irresistible treats are sure to become a family favorite and a hit at any gathering. Serve them with a tall glass of milk for the ultimate indulgence. Happy baking! 🍫🥛
