Instructions:
- The night before you want to cook the beans, rinse the beans several times in warm water.
- Put the rinsed beans in a large pot and cover them with cold water up to 2-3 inches above the beans.
- Let the beans soak overnight.
- The next day, drain and rinse the soaked beans.
- Layer bacon strips on the bottom of the crock pot.
- Top the bacon with the remaining ingredients and the soaked beans.
- Pour water into the pot until it covers the beans by about 1 inch.
- Add the remaining ingredients to the pot.
- Turn on the crock pot and cook all day until the beans are tender.
- It’s okay if the bacon floats to the top during cooking.
- Once cooked, remove the bay leaves from the pot.
- Mash the beans with a potato masher until they reach your desired consistency.
- You can mash the bacon with the beans or remove it, depending on your preference. Leaving some whole beans adds texture.
- For a finishing touch, you can recook the beans in a non-stick skillet.
- Serve the refried beans with grated cheese, chopped green onions, or any other toppings of your choice.
