🍽️ Servings: 8
πŸ”‘ Keywords: Breads, < 60 Mins, Oven

Ingredients:

Quantity Ingredient
3 slices bacon
4 large eggs
1/4 cup milk
1/2 cup butter, melted
1 package Martha White buttermilk cornbread mix
6 green onions, chopped
1 cup broccoli, chopped
1 cup cooked shrimp, chopped
8 oz cheddar cheese, shredded (divided)
Hot pepper sauce
Fresh parsley, chopped

Instructions:

  1. Preheat oven to 375Β°F (190Β°C).

  2. Cook bacon in a 10 1/2-inch cast-iron skillet until crispy. Drain on a paper towel and allow it to cool, then crumble the bacon and set it aside. Reserve 1 tablespoon of bacon drippings; discard the rest.

  3. Prepare skillet: Wipe the skillet clean with a paper towel. Return the reserved bacon drippings to the skillet, then place it in the preheated oven to heat.

  4. Prepare batter: In a large bowl, beat the eggs. Add milk, melted butter, cornbread mix, and a dash of hot pepper sauce. Stir until well blended.

  5. Add mix-ins: Stir in chopped green onions, broccoli, cooked shrimp, and 1 1/2 cups of shredded cheddar cheese.

  6. Bake: Pour the prepared batter into the hot skillet. Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top.

  7. Bake in the preheated oven for 30 to 35 minutes, or until the cornbread is set and golden brown.

  8. Serve: Once baked, sprinkle the cornbread with the crumbled bacon and freshly chopped parsley.
