Special Mie Ayam Recipe
Ingredients
For the Noodles:
- Mie Burung Dara (or any preferred noodle)
Toppings:
- Meatballs (Bakso)
- Chinese cabbage or lettuce
- Chopped green onions
- Fried shallots
- Fried wonton skins
For the Chicken Topping:
- 1/2 chicken, cut into small pieces
- 5 cloves garlic
- 6 shallots
- 2 candlenuts
- Oyster sauce (to taste)
- Sweet soy sauce (to taste)
- 1 onion
- Salt (to taste)
- Pepper (to taste)
- Water (as needed)
- Fish sauce (to taste)
For the Broth:
- Chicken bones (quantity as desired)
- 1 liter mineral water
- Ground pepper (to taste)
- 4 cloves garlic
- Fried shallots (for garnish)
- Ground nutmeg (to taste)
For the Chicken Skin Oil:
- Oil (quantity as needed)
- Chicken skin (quantity as needed)
- Sliced garlic (quantity as needed)
Instructions
Preparing the Chicken Topping:
- Heat a pan and sauté finely ground shallots, garlic, and candlenuts until aromatic and golden brown.
- Add a sufficient amount of water to the pan and let it simmer.
- Incorporate the chicken pieces, oyster sauce, sweet soy sauce, ground pepper, and salt.
- Continue cooking until the chicken is thoroughly cooked and the sauce starts to thicken.
- Add the chopped onion towards the end of cooking and adjust seasoning to taste.
- Turn off the heat once the chicken is cooked and the sauce is flavorful.
Preparing the Chicken Skin Oil:
- In a pan, heat oil and add chicken skins.
- Fry the skins over low heat until crispy and golden.
- Add sliced garlic to the pan and continue frying until the garlic is crispy.
- Remove from heat and set aside.
Preparing the Broth:
- Boil the chicken bones in 1 liter of mineral water until it releases a rich flavor.
- Add garlic cloves and cook until the garlic is thoroughly softened. Alternatively, you can sauté the garlic first before adding it to the broth.
- Season with ground pepper, nutmeg, and salt to taste.
- Garnish with fried shallots and turn off the heat once the broth is flavorful and well-seasoned.
Serving:
- Prepare a bowl and add a splash of fish sauce, chicken skin oil, ground pepper, and salt. Mix well.
- Cook the noodles and vegetables until tender.
- Place the cooked noodles and vegetables into the prepared bowl.
- Combine the noodles, vegetables, and seasonings thoroughly.
- Pour the hot chicken broth over the noodles.
- Top with chicken, meatballs, chopped green onions, crispy wonton skins, and fried shallots.
