Ingredients:

Quantity Ingredient
2 Bartlett pears
1 Honey
1 Cider vinegar
2 Cinnamon sticks
2 Whole cloves
10 Water

Instructions:

  1. Combine all ingredients except pears in a large stainless steel or enameled coated pot.

  2. Bring to a boil over medium-high heat.

  3. Reduce heat and simmer for 5 minutes, stirring occasionally.

  4. Peel pears thinly.

  5. Slice in half lengthwise, leaving the stem on one half.

  6. Remove the core with a sharp paring knife.

  7. Gently place pears in the pot of warm liquid.

  8. Cover and poach for 30 minutes.

  9. If pears rise above the liquid, gently stir them back down to evenly flavor.

  10. When tender, allow to cool in the liquid.

  11. Place pears, with their liquid, cloves, and cinnamon sticks in well-washed jars.

  12. Cover and refrigerate.

  13. Allow to stand for a few days before serving.
