  1. Prepare the Turkey:
    • Preheat your grill for indirect heat at medium-high temperature.
    • Grease the turkey inside and out, then truss (tie) it tightly to balance easily on the spit.
  2. Stuff the Cavity:
    • The cavity can be filled with onion, lemon or orange slices, sprigs of fresh herbs, or sprinklings of dried herbs. Note that regular stuffings don’t cook properly with this method.
    • Ensure there’s a drip pan under the bird to collect drippings for basting.
  3. Cooking Guidelines:
    • For a 3 to 4 lb (1.5 to 2 kg) bird, it will take approximately 1 1/2 hours to spit-roast.
    • For a 6 to 8 lb (3 to 4 kg) bird, the cooking time extends to 2 1/2 to 3 hours.
  4. Grilling Process:
    • If using a covered barbecue (gas or charcoal), you can cook the bird stuffed or unstuffed.
    • Place the bird on the grill over a drip pan nestled between two beds of hot coals.
    • Roast until a meat thermometer inserted in the thickest part of the inner thigh registers 185°F (85°C).
  5. Serve:
    • Once cooked, remove the turkey from the grill and let it rest for a few minutes before carving.
