Ingredients:
- 3 lbs beef tenderloin
- 1/4 cup butter
- 1 onion, finely chopped
- 1/2 cup celery, finely chopped
- 1 cup mushrooms, finely chopped
- 1 clove garlic, minced
- Salt and pepper, to taste
- 1/8 tsp dried basil
- 1/2 tsp dried parsley flakes
- 1/8 cup teriyaki sauce
- 2 slices bacon
Instructions:
-
Prepare the Beef Tenderloin:
- Take the beef tenderloin out of the refrigerator an hour before cooking to bring it to room temperature.
-
Prepare the Stuffing:
- In a skillet, melt the butter over low heat.
- Add the chopped onion, celery, mushrooms, and minced garlic to the skillet.
- Sauté the mixture until the onions and celery are translucent and soft.
-
Prepare the Stuffing Mixture:
- In a bowl, combine bread crumbs with salt, pepper, dried basil, dried parsley flakes, and teriyaki sauce.
- Add the sautéed onion-celery mixture to the bowl with the bread crumbs.
- Lightly toss everything together until well blended.
-
Stuff the Beef Tenderloin:
- Preheat your oven to 350°F (175°C).
- Make a lengthwise cut along the beef tenderloin, going about 3/4 of the way through, to create a pocket for the stuffing.
- Carefully stuff the prepared stuffing mixture into the pocket of the tenderloin.
- Secure the pocket closed with toothpicks to hold the stuffing inside during cooking.
-
Cook the Stuffed Beef Tenderloin:
- Place the stuffed beef tenderloin on a baking sheet or in a roasting pan.
- Lay the bacon slices over the top of the tenderloin.
- Bake the tenderloin uncovered in the preheated oven for approximately 1 hour, or until the internal temperature reaches your desired doneness:
- For medium-rare beef tenderloin, aim for an internal temperature of about 135°F (57°C).
- Adjust cooking time accordingly for different levels of doneness.
-
Serve:
- Once cooked, remove the stuffed beef tenderloin from the oven and let it rest for a few minutes.
- Remove the toothpicks carefully before slicing.
- Serve slices of the stuffed beef tenderloin warm, alongside your favorite sides or accompaniments.
Recipe Notes:
- This stuffed beef tenderloin is perfect for special occasions like Christmas or any gathering where you want to impress your guests.
- Feel free to customize the stuffing by adding ingredients like blue cheese or shrimp and crab stuffing, as mentioned in the recipe description.
- Ensure the stuffing is securely closed inside the tenderloin to prevent it from falling out during cooking.
- Monitor the internal temperature of the tenderloin for the desired level of doneness to ensure it is cooked to perfection.
This recipe combines the elegance of beef tenderloin with a flavorful stuffing, making it a standout dish for festive meals or any time you want to treat yourself and your loved ones to something truly special!
