| Cook and drain the ziti pasta according to package instructions. Set aside. |
| In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. |
| Add the minced garlic to the skillet and cook for an additional 1 minute, until fragrant. |
| Crumble the Italian sausage into the skillet with the onions and garlic. Cook, breaking it apart with a spoon, until browned and cooked through. |
| Stir in the dried basil, dried oregano, dried marjoram, and crushed red pepper flakes, and cook for another minute to allow the flavors to meld. |
| Pour in the tomato puree and water, stirring to combine. Bring the mixture to a boil, then reduce the heat to medium-low and let it simmer uncovered for about 30 minutes, or until thickened. |
| Season the sauce with salt to taste, adjusting as needed. |
| Preheat the oven to 350°F (175°C). |
| In a large mixing bowl, combine the cooked ziti pasta, cottage cheese, shredded mozzarella cheese, and half of the shredded Fontina cheese. Mix well to combine. |
| Add the prepared sauce to the pasta mixture and stir until evenly coated. |
| Transfer the mixture to a greased casserole dish, spreading it out evenly. |
| Sprinkle the remaining shredded Fontina cheese and grated Parmesan cheese over the top of the casserole. |
| Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly, and the casserole is heated through. |
| Once baked, remove the casserole from the oven and let it cool slightly before serving. |
| Serve the Pasta Rustica hot, garnished with fresh parsley if desired. Enjoy! |
