- Periodically skim off any scum that rises to the top of the broth and discard it.

- Reserve the turkey carcass but discard the cooked vegetables.
- Return the strained stock to a simmer over medium heat.

- After 30 minutes, add the diced carrots, onion, and turnips to the simmering broth.
- Continue to simmer the soup for another 30 minutes, or until the vegetables are tender.
