Ingredients:
- 3 ripe bananas
- 1 tablespoon lemon juice
- 1/2 cup artificial sweetener
- 1/2 cup dates
- 1 1/2 cups flour
- 1/2 cup wheat germ
- 1/2 teaspoon salt
- 1/2 tablespoon baking powder
- 1/2 teaspoon baking soda
Instructions:
-
Preheat oven to 375 degrees F (190 degrees C).
-
Prepare the Banana Mixture:
- In a small bowl, mash the bananas with a fork until very mushy.
- Add lemon juice, artificial sweetener, oil, and dates to the mashed bananas. Stir well to combine.
-
Prepare the Dry Ingredients:
- In a separate large bowl, combine flour, wheat germ, salt, baking powder, and baking soda. Stir until evenly mixed.
-
Combine Wet and Dry Ingredients:
- Add the banana mixture to the bowl of dry ingredients. Gently mix together until just combined. Be careful not to overmix, as this can result in a dense loaf.
-
Bake the Banana Bread:
- Spoon the batter into a lightly oiled loaf pan, spreading it evenly.
- Place the loaf pan in the preheated oven and bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- Keep an eye on the bread towards the end of the baking time to prevent over-browning.
-
Check for Doneness:
- To ensure the bread is fully baked, insert a knife or toothpick into the center. If it comes out clean or with a few moist crumbs, the bread is ready.
- If the knife comes out with wet batter, continue baking for a few more minutes before testing again.
-
Cool and Serve:
- Once baked, remove the banana bread from the oven and allow it to cool in the pan for about 10 minutes.
- Carefully transfer the bread to a wire rack to cool completely before slicing.
- Serve slices of delicious, moist banana bread on its own, or with a spread of butter or your favorite toppings.
Enjoy the delightful aroma and comforting taste of freshly baked banana bread, perfect for any occasion! Whether enjoyed warm out of the oven or toasted with your morning coffee, this recipe is sure to become a household favorite.
