Diet: Vegetarian

Ingredients:

For the Burger:

  • 6 Burger buns, halved
  • 2 Tomatoes, sliced
  • 1 Cucumber, sliced
  • 1 Onion, thinly sliced
  • A few leaves of Iceberg lettuce

For the Chickpea Patties:

  • 1 cup Kabuli Chana (White Chickpeas), soaked for 8 hours
  • 2 Potatoes (Aloo), boiled and cubed
  • 1 inch Ginger, grated
  • 1 Onion, finely chopped
  • 2 Green Chillies, finely chopped
  • A small bunch of Mint Leaves (Pudina), finely chopped
  • 1 tsp Cumin powder (Jeera)
  • 1 tsp Chaat Masala Powder
  • 3 tbsp Gram flour (besan)
  • 1 Lemon, juiced
  • Salt, to taste
  • Oil, for cooking

Preparation Time: 20 minutes

Cooking Time: 30 minutes

Instructions:

  1. Prepare the Chickpea Patties:

    • Boil the potatoes and set them aside.
    • In a pressure cooker, add the soaked chickpeas and some water. Pressure cook for 6-8 whistles. Turn off the heat and allow the pressure to release naturally.
    • Once the pressure is released, drain the excess water from the chickpeas and set them aside.
    • In a food processor, combine the boiled potatoes, chickpeas, grated ginger, chopped onion, green chilies, mint leaves, cumin powder, chaat masala, gram flour, lemon juice, and salt.
    • Blend the mixture to form a coarse dough, ensuring all ingredients are well combined, but avoid making it smooth. Transfer the mixture into a large bowl and taste for seasoning, adjusting salt and spices as needed.
  2. Shape the Patties:

    • Divide the chickpea mixture into 6 equal portions and shape them into round patties. Lightly flatten each patty with your fingers and set them aside.
  3. Cook the Patties:

    • Heat a skillet over medium heat and lightly grease it with oil (preferably in a cast iron skillet).
    • Place the patties on the skillet and drizzle a bit of oil over them. Cook for 3-4 minutes on each side or until they are golden brown and crispy. Be sure to cook them on medium heat to ensure they cook through.
  4. Assemble the Burger:

    • Slice the burger buns horizontally. Optionally, toast the buns on the skillet with a little butter for extra flavor, or serve them as they are.
    • Lay the bottom halves of the buns on a flat surface. Place a layer of iceberg lettuce on the bottom, followed by slices of tomatoes, cucumber, and onion.
    • Top the vegetables with the cooked chickpea patty, then drizzle with honey mustard sauce (optional) before placing the top half of the bun over it.
  5. Serve:

    • Serve your Vegetarian Chickpea Burger with a side of sweet potato and rosemary crisps or mango-flavored mixed fruit popsicles for a complete and delightful meal.

This recipe provides a wholesome, vegetarian alternative to traditional burgers, perfect for gatherings, parties, or just a simple, satisfying dinner. Enjoy!
