Veggie Lasagna Recipe 🥦🍅

Ingredients:
- 1 cup fresh mushrooms, sliced
- 1 green pepper, chopped
- 1 onion, chopped
- 2-3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 tsp dried thyme
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 1/8 tsp celery seed
- 2 bay leaves
- 1 egg
- 8 oz cottage cheese
- 1 1/2 cups shredded mozzarella cheese
- 9 lasagna noodles
- 1 package (about 10 oz) frozen mixed vegetables
- Olive oil
- Salt and black pepper to taste
Instructions:

Prepare the Veggie Mixture:
- In a large skillet, heat some olive oil over medium heat. Add the mushrooms, green pepper, onion, and garlic. Cook until tender, stirring occasionally.

Season and Simmer:
- Stir in the diced tomatoes, tomato sauce, dried thyme, dried basil, dried oregano, celery seed, and bay leaves. Season with salt and black pepper to taste. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes.

Prep the Pasta and Vegetables:
- While the sauce simmers, cook the lasagna noodles according to the package instructions. Also, cook the frozen mixed vegetables according to their package instructions.

Prepare the Cheese Mixture:
- In a medium bowl, beat the egg and mix it with the cottage cheese and half of the shredded mozzarella cheese.

Layer the Lasagna:
- Preheat the oven to 375°F (190°C). Grease a 13×9-inch baking dish.
- Start layering the lasagna in the prepared baking dish in the following order: noodles, cheese mixture, cooked vegetables, and tomato mixture. Repeat these layers twice, ending with a layer of tomato mixture on top.

Bake:
- Cover the baking dish with aluminum foil and bake the lasagna in the preheated oven for 40 minutes.

Add Cheese Topping:
- Remove the foil and sprinkle the remaining shredded mozzarella cheese over the top of the lasagna. Return it to the oven, uncovered, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Serve:
- Once done, remove the lasagna from the oven and let it stand for about 10 minutes before slicing and serving. This allows the lasagna to set and makes it easier to serve without falling apart.
