- 1 bay leaf
- 1/2 teaspoon whole black peppercorns
- 1 teaspoon fennel seeds
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/3 cup fresh lemon juice
- 1 teaspoon kosher salt
- 3/4 teaspoon fresh ground black pepper

- 2 cups arugula
- 8 slices thick slab bacon, cooked and crisp
Instructions
Step 1: Make the Aioli
In a food processor, combine 2 egg yolks, 2 tablespoons of lemon juice, 1 1/2 tablespoons of red wine vinegar, 1 tablespoon of Dijon mustard, 1 clove of minced garlic, and 1/2 teaspoon of kosher salt. Blend these ingredients until they are well mixed. With the processor running, slowly add 1 1/2 cups of olive oil in a constant stream through the feed tube. Continue blending until the mixture reaches the consistency of mayonnaise. Add 3/4 teaspoon of fresh coarse ground black pepper and mix for an additional 10 seconds. Transfer the aioli to a bowl, cover it, and refrigerate.

In a 2-quart saucepan, combine 4 cups of water with 1 quartered onion, 1 peeled and chopped carrot, 2 chopped stalks of celery, 1 bay leaf, and 1/2 teaspoon of whole black peppercorns.
