Vanilla Strawberry and Apricot Jam

Ingredients:

Strawberries 500g
Apricots 500g
Granulated Sugar 350g
Vanilla Bean 1
Jam Setting Powder (3:1) 25g

Instructions:

Step 1:
Begin by thoroughly washing the strawberries and apricots under cold running water. For the apricots, remove the stems with your fingers. Peel and trim the strawberries, discarding the green tops. Cut both the apricots and strawberries into small pieces and place them into separate bowls.

Step 2:
Slice the vanilla bean lengthwise to expose the seeds inside. If vanilla beans are unavailable, you can substitute with 1 teaspoon of vanilla extract or a packet of vanilla sugar.

Step 3:
In a large, tall steel pot, combine the prepared apricots and strawberries. Scrape the seeds from the vanilla bean and add them to the pot along with the vanilla pod itself.

Step 4:
In a separate bowl, mix together the granulated sugar and the 25g of jam-setting powder (3:1). Add this sugar mixture directly to the fruit in the pot, ensuring the fruit and sugar are mixed evenly.

Step 5:
Place the pot on the stovetop over medium-high heat and bring the mixture to a boil, stirring constantly to prevent it from sticking to the bottom. Once the mixture reaches a boil, allow it to simmer for 3 minutes, maintaining a high heat while continuing to stir.

Step 6:
Remove the pot from the heat and discard the vanilla pod. Stir the jam to dissolve any foam that may have formed on the surface.

Step 7:
Prepare sterilized jars for the jam. Use a funnel to ensure the jam is poured neatly into the jars without spillage. Pour the hot jam into the jars, leaving about 1 cm of space from the rim. Seal the jars tightly, ensuring they are well-closed to create an airtight seal.

Step 8:
Allow the jam to cool completely. Once cooled, check that the jars have sealed properly. Press the center of the lid – if you don’t hear the typical “click,” it means the vacuum seal has formed, and your jam will be preserved for long-term storage.

Your homemade Vanilla Strawberry and Apricot Jam is now ready to enjoy! Store it in a cool, dark place for up to several months. Once opened, refrigerate and enjoy within a few weeks.
