Instructions
To prepare your delicious Vegan Faux Ramen, start by making the cannellini bean broth. Begin by soaking the dried cannellini beans in fresh water for 24 hours. After this time, drain and rinse the beans thoroughly, then transfer them to a large pot. Add enough fresh water to cover the beans, and toss in a piece of kombu seaweed for extra umami flavor. Let the beans simmer for around 75 minutes or until they become tender. Keep an eye on them to ensure they don’t overcook, then remove the kombu from the pot.
While the beans cook, you can move on to making the homemade ramen noodles. In a large bowl, crack two eggs and add 140g of all-purpose flour. Using a fork, mix the ingredients until the dough starts to form. Once it begins to take shape, switch to using your hands to knead the dough. Once smooth, wrap the dough ball tightly in plastic wrap and let it rest at room temperature for at least 30 minutes.
Now it’s time to prep the vegetables. Start with the asparagus: trim the tough, woody ends, then slice the spears in half lengthwise and cut them into 2 cm segments on the diagonal. For the carrots, peel and trim them, then cut them into diagonal slices about 3-4 mm thick. Lastly, prep the snow peas by rinsing, trimming the ends, and cutting them diagonally into 1.5 cm pieces.
For the sautéed vegetables, heat some oil in a large skillet over medium heat. Add the garlic (peeled and smashed) and fresh chili peppers to the pan, allowing them to release their fragrance. Toss in the sliced carrots, snow peas, and asparagus. Season with salt and pepper, and stir-fry on high heat for about 4-5 minutes, until the vegetables are cooked but still vibrant and crisp. Transfer them to a bowl, discarding the garlic and chili peppers.
Now, cook the eggs. These are not your typical hard-boiled eggs, but soft-boiled or “barzotte” eggs, where the whites are fully set but the yolks remain creamy. Place the eggs in a pot of boiling water and cook for 6-7 minutes. Once the eggs are done, remove them from the pot and cool them briefly under cold water. Peel them, then slice them in half using a smooth knife.
With everything prepared, return to the homemade ramen noodles. Take the rested dough, dust it lightly with semolina, and roll it out using a pasta machine. Start with the widest setting and gradually work your way to the second-to-last setting (on our machine, this corresponds to setting number 7). After passing the dough through the rollers twice, it should be smooth and elastic. Cut the sheets into rectangles, dust them with semolina, and let them air dry for a few minutes.
Once dried, slice the pasta into thin strips about 2-3 mm wide. Cook the noodles in boiling water for 2-3 minutes, then drain them.
Assemble your ramen by ladling the bean broth into individual bowls. Add a few fresh herb leaves (such as basil, cilantro, or parsley) to the broth. Then, add a generous portion of the freshly made noodles. Top the ramen with a soft-boiled egg half, a few spoonfuls of sautéed vegetables, and some finely sliced spring onions for an extra kick of freshness.
