Hearty Vegetable Beef “Stoup” Recipe

Description: This hearty dish falls somewhere between a soup and a stew, earning it the endearing term “stoup,” popularized by the one and only Rachael Ray. Ingredients:

2 stew beef chunks
1 1/2 corn
3 1/2 water
2 onions
1 onion
1 potato
1 salt
1 spinach
1/2 thyme
1 green beans
1/2 green peas
1 carrots
6 lima beans
1 celery
3 ketchup
1 green pepper
1 parsley
2 tomatoes

Instructions:

  1. In a large kettle, cover the stew beef chunks with water and add chopped onions, salt, and thyme.
  2. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, skim any excess fat from the surface of the liquid.
  4. Reduce the heat to low, cover the kettle, and simmer for 3-4 hours, allowing the flavors to meld and the beef to become tender.
  5. After simmering, add all the remaining ingredients to the pot – corn, chopped onion, potato, spinach, green beans, green peas, carrots, lima beans, celery, ketchup, green pepper, parsley, and tomatoes.
  6. Cover the pot once again and simmer for an additional 30 minutes, allowing the vegetables to soften and the flavors to marry.
  7. Taste the stoup and adjust the seasoning according to your preference.
  8. Note: If you prefer a thicker consistency, you can add a torn-up piece of bread or two to the pot, stir well, and continue to simmer until fully incorporated.
