Mixed Vegetable Idli Upma Recipe

This Mixed Vegetable Idli Upma is a nutritious and delightful South Indian breakfast, brimming with fresh vegetables like carrots, beans, and capsicum that add a lovely crunch to the soft, spongy idlis. The infusion of mint leaves (pudina) elevates the flavor, making it an ideal breakfast or even a savory tea-time snack. It’s also perfect for serving at parties, where guests can enjoy it with a pick.
Ingredients:
- 10 Idlis, cut into diced pieces
- 10 Pearl onions (Sambar Onions), finely chopped (or 1 large onion)
- 1 Green Bell Pepper (Capsicum), finely chopped
- 3 Green Chillies, finely chopped
- 1-inch Ginger, finely chopped
- 1 Carrot (Gajjar), finely chopped
- 1/2 cup Green beans (French Beans), finely chopped
- 1/2 teaspoon Turmeric powder (Haldi)
- 1/2 teaspoon Mustard seeds (Rai/ Kadugu)
- 1 teaspoon White Urad Dal (Split)
- 6 Curry leaves, finely chopped
- 1 tablespoon Sesame (Gingelly) Oil
- A small bunch of Mint Leaves (Pudina), finely chopped
- Salt, to taste

Cook Time: 10 minutes
Instructions:
- Heat a teaspoon of sesame oil in a heavy-bottomed pan. Add mustard seeds and let them crackle for a few seconds.
- Add the split urad dal and allow it to roast until it turns light brown.
- Once the dal is roasted, add chopped onions, followed by ginger, green chillies, and curry leaves. Sauté on medium heat until the onions turn translucent.
- Add the chopped carrots, capsicum, and beans. Sprinkle salt and roast the vegetables over medium heat. If needed, add a little water, cover, and steam cook the vegetables until tender.
- Once the vegetables are cooked, add turmeric powder, diced idlis, and additional salt to taste.
- Sprinkle a little water to prevent the idlis from becoming too dry. Stir everything together, then cover the pan and let the mixture simmer for 3-4 minutes on low heat.
- After simmering, add the chopped mint leaves and stir well.
- Serve the Mixed Vegetable Idli Upma hot in a serving bowl.
