For the Dosa:
- 2 cups Dosa rice
- 1/2 cup Black Urad Dal (Split)
- 1 teaspoon Methi Seeds (Fenugreek Seeds)
- 1/2 teaspoon Salt
- Oil (or castor oil) for frying the dosa
For the Vegetable Filling:
- 1 Red Bell Pepper (Capsicum), chopped
- 2 Tomatoes, chopped
- 1 Red Onion, finely chopped
- 2 Green Chillies, chopped (seeds removed)
- 1/2 inch Ginger, finely chopped
- 2 cloves Garlic, minced
- 20 Curry leaves
- 1 Dry Red Chilli
- 1/2 teaspoon Mustard seeds (Rai/Kadugu)
- 1/2 teaspoon Cumin seeds (Jeera)
- A pinch of Asafoetida (hing)
- 2 tablespoons Coriander (Dhania) Leaves, chopped

Prepare the Dosa Batter:
To make the batter, refer to the link on how to prepare Dosa Batter. Allow the batter to ferment as per the instructions. -
Prepare the Vegetable Filling:
- Heat oil in a pan. Add mustard seeds, cumin seeds, dry red chilli, and a pinch of asafoetida (hing).
- Once the mustard seeds splutter, add the curry leaves, followed by finely chopped onions, ginger, and garlic. Sauté for a few minutes until the onions turn soft and translucent.
- Add chopped green chillies, red bell peppers, and tomatoes. Stir well and cook for about 5-7 minutes until the vegetables soften.
- Season with salt and cook for another 2 minutes. Garnish with fresh coriander leaves.

Cook the Dosa:
Heat a non-stick pan or griddle. Grease it lightly with oil and pour a ladle of dosa batter onto the pan. Spread it into a thin circle and cook for 2-3 minutes until the edges become crispy. -
Assemble the Masala Dosa:
Once the dosa is cooked, spoon the vegetable filling onto the center. Fold the dosa over the filling and serve hot with chutney or sambar.
