Instructions

Step 1: Prepare the Kimchi (Optional but Recommended)

To make the Cabbage Kimchi (served as a side), follow the detailed Cabbage Kimchi Recipe. Remember that kimchi needs time to ferment (1-2 days), so prepare it in advance and store it in the fridge for the best flavors.

Step 2: Prepare the Green Beans

  1. Cook the Green Beans: In a pressure cooker, add the green beans, 2 tablespoons of water, and a pinch of salt.
  2. Cook for 2 Whistles: Close the lid, cook for two whistles, then release the pressure immediately. This ensures that the beans are perfectly cooked and tender. Set aside.

Tip: You can also steam the beans or blanch them in boiling water, depending on your preference.

Step 3: Prepare the Hakka Noodles

  1. Cook the Noodles: Bring a large pot of water to a boil. Add the Hakka noodles and cook according to the instructions on the packet (usually 3-4 minutes). Once done, drain the noodles and rinse them under cold water to stop the cooking process and prevent them from becoming too soft.
  2. Coat with Oil: After draining, add a tablespoon of oil to the noodles and toss to prevent them from sticking together. Set them aside.

Step 4: Prepare the Vegetable Stir-Fry

  1. Sautรฉ Onions and Ginger: Heat a tablespoon of oil in a large frying pan over high heat. Add the sliced onions and finely chopped ginger. Stir-fry for a couple of minutes until the onions soften.
  2. Add Vegetables: Add the sliced bell peppers (capsicum), carrot, green beans, cabbage, and spring onions to the pan. Stir-fry on high heat for 4-5 minutes to retain the vegetables’ crisp texture.
  3. Season: Add salt, pepper, soy sauce, red chili sauce, and chili vinegar. Stir-fry for another 2 minutes, allowing the sauces to coat the vegetables.
  4. Mix with Noodles: Add the cooked noodles to the pan and mix well, ensuring the noodles are well coated with the vegetables and sauces. Cook for another minute to allow the flavors to blend. Remove from heat and set aside.

Step 5: Prepare the Veg Momos

  1. Make the Momo Dough: In a mixing bowl, combine 2 cups of all-purpose flour (maida), a pinch of salt, and a bit of oil. Gradually add water and knead into a smooth, soft dough. Cover and set it aside for 15-20 minutes.
  2. Prepare the Filling: In a separate bowl, mix the finely chopped cabbage, grated carrot, chopped onion, and grated ginger. Add salt to taste and mix well.
  3. Shape the Momos: Roll out small portions of dough into thin circles. Place a spoonful of the vegetable filling in the center of each circle. Fold the edges and seal the momos tightly.
  4. Steam the Momos: Place the momos in a steamer and steam for about 10-12 minutes or until the dough is cooked and translucent.

Step 6: Prepare the Grilled Tofu

  1. Marinate the Tofu: Slice the tofu into thick strips and press to remove any excess water. In a bowl, combine the sesame seeds, finely chopped garlic, chopped spring onion, sweet chili sauce, sriracha sauce, and salt. Coat the tofu with this marinade and let it sit for 10-15 minutes.
  2. Grill the Tofu: Heat a grill pan or a non-stick frying pan over medium heat. Place the marinated tofu slices in the pan and grill each side for 3-4 minutes until they are golden and crispy.

Step 7: Assemble the Vegetarian Chinese Sizzler

  1. Prepare the Sizzler Plate: Heat a sizzler plate over medium-high heat until itโ€™s smoking hot. Drizzle a bit of oil on the plate to prevent sticking.
  2. Assemble the Dish: On the sizzler plate, arrange the Hakka Noodles, Steamed Beans, Grilled Tofu, and Momos. Add the Kimchi (if made earlier) as a side.
  3. Sizzle and Serve: Once all the ingredients are arranged, bring the sizzler plate to the table, and serve immediately while itโ€™s sizzling. Enjoy the crispy textures, spicy flavors, and the delightful aroma of this amazing Chinese vegetarian sizzler.

Tips and Variations

  • Customize the Vegetables: Feel free to add other vegetables like mushrooms, broccoli, or baby corn to the stir-fried veggies and noodles for more variety.
  • Spicy Level: Adjust the amount of chili sauce and sriracha according to your spice tolerance.
  • Momos Variations: You can experiment with different fillings like spinach and cheese, or tofu and vegetables, to create your own version of momos.

The combination of crispy tofu, savory momos, tangy kimchi, and delicious noodles makes it a perfect dinner option for vegetarians.
