Coffee Soft Tart Recipe

Ingredients:

All-purpose flour 160g
Butter (for greasing) As needed

Fresh brewed coffee 1 cup (50g)
Corn oil 80g
Baking powder (for sweets) 13g
Mascarpone cheese 350g
Powdered sugar 130g
Instant coffee 5g
Heavy cream 300g
Coffee beans (for garnish) As needed

Instructions:

Step 1: Prepare the Coffee
To start, prepare the coffee using a moka pot (you’ll need 50g of ground coffee). Once brewed, set it aside to cool slightly.

Step 2: Make the Cake Base
In a mixing bowl, combine the eggs, sugar, and a pinch of salt. Use an electric mixer to beat the ingredients until smooth and creamy. Add the cooled coffee and continue mixing for a few moments until fully incorporated. Gradually add the corn oil and mix again until the batter is smooth and well-combined.

Step 3: Bake the Cake
Grease a 28 cm tart pan (preferably a “furbo” mold with a removable bottom) with butter, then pour the batter into the pan. Preheat the oven to 180°C (350°F) and bake the tart for about 30 minutes in a static oven. To check doneness, insert a toothpick into the center of the cake. If it comes out clean, it’s ready to be removed from the oven. Let it cool completely.

Step 4: Prepare the Coffee Mascarpone Cream
Once the cake has cooled, prepare the filling by mixing the mascarpone cheese with 80g of powdered sugar. Stir until the mixture becomes smooth and creamy. Spread this mascarpone cream evenly into the center of the cooled cake.

Step 5: Whip the Cream
In a separate bowl, whip the heavy cream with the remaining 50g of powdered sugar until stiff peaks form. Transfer the whipped cream into a pastry bag (no tip needed), and pipe small dollops of whipped cream across the surface of the tart.

Step 6: Garnish and Serve
Garnish with a few whole coffee beans on top for a decorative touch. Your Coffee Soft Tart is now ready to be served!
