Instructions:

  1. Melt the Butter:
    Melt the butter in a heavy medium-size saucepan over medium heat.

  2. Saute Shallots and Garlic:
    Add the shallots and garlic to the saucepan and sautรฉ until transparent, about 3 to 4 minutes.

  3. Flame the Cognac:
    Add the cognac to the saucepan and carefully flame it. To do this, remove the saucepan from the heat and touch a lighted match to the edge of the pan; the fumes of the cognac will ignite. Holding the pan away from you, allow the flames to die down naturally.

  4. Simmer with Stock and Cream:
    Return the saucepan to low heat and add the chicken stock and heavy cream. Simmer over low heat until thickened, about 15 to 20 minutes.

  5. Add Mushrooms:
    Stir in the mushrooms and continue to simmer for an additional 3 to 5 minutes, until mushrooms are tender and flavors are well combined.

  6. Season and Serve:
    Season the sauce with salt and pepper according to your taste. Serve immediately over your favorite dish.
