Melt the Butter:
Melt the butter in a heavy medium-size saucepan over medium heat. -
Saute Shallots and Garlic:

Add the cognac to the saucepan and carefully flame it. To do this, remove the saucepan from the heat and touch a lighted match to the edge of the pan; the fumes of the cognac will ignite. Holding the pan away from you, allow the flames to die down naturally. -
Simmer with Stock and Cream:
Return the saucepan to low heat and add the chicken stock and heavy cream. Simmer over low heat until thickened, about 15 to 20 minutes. -
Add Mushrooms:
Stir in the mushrooms and continue to simmer for an additional 3 to 5 minutes, until mushrooms are tender and flavors are well combined. -
Season and Serve:
