Orange Mousse Recipe

Ingredients:

Fresh Orange Juice 100 ml

Fresh Whipping Cream 300 ml
Granulated Sugar (for meringue) 20 g
Gelatin Sheets 7 g
Granulated Sugar (for mousse) 125 g
Water 25 ml
Egg Whites 65 g
Pinch of Salt 1 pinch

Instructions:

  1. Prepare the Italian Meringue:

    • Begin by preparing the Italian meringue. In a saucepan, combine the 20g of sugar with the 25ml of water. Heat the mixture over medium heat until it reaches a temperature of 121ยฐC (250ยฐF).
    • Once the syrup reaches the correct temperature, slowly pour it over the egg whites (beating them at medium speed) until they form stiff peaks, creating the meringue.
  2. Soak the Gelatin:

    • While the meringue is forming, place the gelatin sheets in a small bowl filled with cold water and allow them to soak for at least 10 minutes to soften.
  3. Flavor the Mousse:

    • In a separate bowl, mix the fresh orange juice and zest. Once the gelatin has softened, strain and gently squeeze out the excess water. Add the gelatin sheets to the orange mixture and stir until itโ€™s completely dissolved. If necessary, you can also dissolve the gelatin in the microwave for a few seconds.
  4. Whip the Cream:

    • Using a stand mixer or handheld electric mixer, beat the fresh cream until it forms soft peaks. Be sure not to overwhip it, as the cream should remain light and airy.
  5. Combine Meringue and Orange Mixture:

    • Gently fold the whipped cream into the meringue, working slowly from top to bottom using a spatula to avoid deflating the mixture.
    • Next, pour a portion of the orange and gelatin mixture into a separate bowl. Stir the dissolved gelatin mixture into the meringue mixture, continuing to fold gently until the mousse is smooth and well combined.
  6. Chill the Mousse:

    • Once the mousse is thoroughly mixed, cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow it to set and firm up.
  7. Serve:

    • After the mousse has set, transfer it into a piping bag fitted with a smooth tip and pipe it into individual serving glasses or bowls.
    • For an extra touch of elegance, garnish the mousse with small pieces of orange, candied orange peel, and a sprig of mint.
