Oyster Chowder Recipe

Description: I grew up on Oyster “stew”. I like to “create” new things and this is what I came up with. I fix this for myself only and so I made it how I like it, and this is the result. Hope you like it.

Ingredients:

  • 1 can of corn
  • 0.5 lb potatoes, cubed
  • 2 tbsp margarine
  • 2 tbsp bacon, chopped
  • 1/4 cup onion, chopped
  • 1 tbsp flour
  • 1 clove garlic, minced
  • 1 cup milk
  • 1 can of oysters
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions:

  1. Prepare Ingredients: In a medium saucepan, cut up the bacon into small pieces with scissors. Cook bacon until crispy, then remove excess grease, leaving only one tablespoon in the pan. Add 2 tablespoons of margarine, cubed potatoes, and 1/4 cup of chopped onion to the pan.

  2. Saute Potatoes and Onion: Saute the potatoes and onion in the bacon and butter mixture until they become soft and slightly golden.

  3. Add Flour: Sprinkle 1 tablespoon of flour over the sauteed potatoes and onion. Stir well to coat the potatoes and onion evenly with the flour.

  4. Add Liquid: Pour in the liquid from the canned oysters and corn. Stir well to combine all the ingredients and bring the mixture to a gentle boil.

  5. Incorporate Oysters and Corn: After about 5 minutes of boiling, add the canned oysters and corn kernels to the saucepan. Season with salt, pepper, and minced garlic. Pour in 1 cup of milk and stir to combine.

  6. Simmer: Lower the temperature to a simmer and let the chowder cook for another 5 minutes, stirring constantly to prevent sticking.

  7. Check Potatoes: Make sure that the potatoes are cooked thoroughly and tender. If done, add chopped parsley for freshness and flavor.

  8. Serve: Ladle the hot chowder into bowls and garnish with additional parsley if desired. Serve immediately and enjoy your delicious homemade Oyster Chowder!
