Venere Rice with Squid Tentacles and Prawns

Ingredients:

Black Venere Rice 300g
Squid Tentacles 150g
Prawns (peeled) 150g
Extra Virgin Olive Oil 50g
White Wine 20g
Fine Salt To taste
Black Pepper To taste

Prawns (peel shells for fumetto)
Extra Virgin Olive Oil (for cooking) 60g
Garlic 1 clove
Water 1L
Onion 80g

Instructions:

  1. Prepare the Broth (Fumetto):
    Begin by preparing the fumetto (broth). Peel the prawns, making a small incision along the back to remove the intestines. Set the shrimp meat aside in the fridge and reserve the shells. In a large pan, heat the olive oil and add the garlic clove, onion (cut into wedges), and the prawn shells. Sauté for about 5 minutes, stirring occasionally, until the shells are well browned. Add the white wine and allow it to evaporate.

  2. Create the Broth:
    Add the water to the pan, then add the parsley stems and peppercorns to infuse the broth with flavor. Allow the mixture to simmer and cook for about 20 minutes, then strain it. Keep a ladle of the broth aside for later use. The remaining broth will be used to cook the rice.

  3. Cook the Rice:
    In a separate large pot, bring the broth to a boil. Add the Venere rice to the boiling broth, stirring occasionally. Cook until the rice is tender and absorbs the flavors of the fumetto, approximately 18-20 minutes. Adjust the seasoning with salt and pepper to taste.

  4. Prepare the Squid and Prawns:
    In another pan, heat the olive oil and add a clove of garlic. Once the garlic begins to brown, remove it from the pan and add the squid tentacles. Sauté for a couple of minutes until the squid begins to turn golden. Deglaze with the white wine and let it evaporate. Add a ladle of the fumetto to the pan and stir.

  5. Combine the Prawns:
    Once the squid is cooked through, add the prawns and cook for an additional 2-3 minutes, just until the prawns turn pink and firm. Stir the mixture gently to combine the ingredients.

  6. Assemble and Serve:
    Once the rice is cooked, transfer it to a serving platter. Spoon the squid and prawns mixture on top of the rice, and garnish with freshly chopped parsley. Serve hot, enjoying the rich flavors of the seafood and the aromatic Venere rice.
