Instructions

  1. Prepare the Asparagus:

    • Snap off the woody ends of the asparagus spears.
    • Cut the asparagus on a diagonal into bite-sized pieces.
    • Bring a pot of water to a boil, then blanch the asparagus by adding it to the boiling water and cooking for about 2-3 minutes, just until tender but still bright green.
    • Immediately drain the asparagus and immerse it into a bath of cold water and ice. This helps to stop the cooking process and keep the asparagus crisp and colorful.
  2. Prepare the Other Vegetables and Fruit:

    • While the asparagus cools, thinly slice the carrot and chop the celery into small pieces.
    • Drain the mandarin orange segments if using canned oranges, and cut the red seedless grapes in half.

    • In a large bowl, toss together the cooled asparagus, mandarin orange segments, halved grapes, sliced carrot, and chopped celery.
    • Add salt and white pepper to taste.
