Instructions

  1. Start with the Rice:
    In a pressure cooker, heat 2 teaspoons of olive oil. Once the oil is hot, add the finely chopped garlic. Sauté for 30 seconds until the garlic becomes aromatic.
    Next, add the thinly sliced onion and cook it for about 2 minutes until it softens and turns translucent.

  2. Cook the Rice:
    Season with salt and dried rosemary, and then add 1 cup of washed and dried rice. Stir the mixture well to coat the rice with the olive oil and spices.
    Pour in 2 cups of water, give everything a quick stir, and close the pressure cooker. Cook the rice for 2 whistles, then turn off the heat and let the pressure release naturally.
    Once the pressure has released, open the cooker and allow the rice to cool slightly.

  3. Prepare the Bell Pepper Mixture:
    While the rice is cooling, heat 1 tablespoon of olive oil in a separate pan.
    Add 1 teaspoon of red chilli flakes, and toss in all three colors of bell peppers (green, red, and yellow). Season with a pinch of salt and sauté the mixture for 4-5 minutes, letting the peppers soften but still retain a slight crunch.
    Sprinkle 2 teaspoons of mixed herbs over the bell peppers, and stir to combine.

  4. Combine Everything:
    Once the peppers are cooked, add the bell pepper mixture to the cooled rice along with the freshly chopped parsley. Gently mix everything together, ensuring the rice is evenly flavored with the peppers and herbs.

  5. Serve:
