Instructions

Step 1: Prepare the Curry Paste

  1. Combine all the curry paste ingredients—lemongrass, Thai basil leaves, galangal, kaffir lime leaves, shallots, coriander stems, and grated garlic—in a mixer or food processor.
  2. Blend the ingredients into a smooth paste. Set aside.

Step 2: Sauté the Paste

  1. Heat 2 tablespoons of oil in a large skillet or wok over medium heat.
  2. Add the prepared curry paste and sauté for 2 minutes until fragrant.

Step 3: Cook Broccoli

  1. Add the chopped broccoli to the skillet. Sauté for 2 minutes, allowing the broccoli to absorb the flavors.

Step 4: Add Tofu
