White Urad Dal (Split Black Gram) ½ tsp
Curry Leaves (Kadi Patta) 3 leaves

Instructions

  1. Prepare the Base:

    • Start by heating oil in a pan or kadhai. Add chopped onion, garlic cloves, and capsicum (bell pepper) to the hot oil.
    • Sauté these ingredients until the capsicum becomes soft and tender. Add a pinch of salt, cover, and cook until the vegetables soften completely.
  2. Add Tomatoes and Dry Red Chilies:

    • Once the capsicum is soft, add chopped tomatoes and dry red chilies to the mixture. Continue cooking until the tomatoes soften and blend into the mixture.
  3. Blend the Mixture:

    • Turn off the heat and let the mixture cool slightly. Once it has cooled down, transfer it to a blender or food processor. Add salt to taste and blend everything into a smooth paste.
  4. Prepare the Tempering:

    • In a separate small pan, heat 1 tablespoon of oil. Add mustard seeds, cumin seeds, urad dal, dry red chili, and curry leaves. Let these spices sizzle for about 10 seconds, which will release their flavor into the oil.
  5. Combine and Serve:

    • Pour the tempering into the prepared chutney and mix thoroughly. This step enhances the chutney with rich flavors from the spices.
  6. Serving Suggestion:

    • Serve your freshly made capsicum chutney alongside crispy dosas, idlis, or any Indian breakfast. It’s also a great accompaniment to rice and curries.
