For the Frosting:
- 1 1/2 cups Powdered Sugar
- 1/2 tablespoon Milk

- 1 cup Walnuts (chopped)
- 1 cup Pecans (chopped)
Preparation Time: 20 minutes
Cooking Time: 35 minutes
Total Time: 55 minutes
Instructions:
-
Preheat Oven:
Preheat your oven to 400°F (200°C). -
Prepare the Cake Batter:
In a large glass mixing bowl, sift together Vivatta Maida, baking powder, and salt.
In another bowl, beat the softened butter and sugar with a spatula or electric mixer set on low speed until the mixture becomes soft and fluffy.
Add the eggs one at a time, then mix in the vanilla extract and milk. Beat on high speed for about 2 minutes.
Gradually add the wet mixture to the dry ingredients, stirring until the batter is smooth and well combined. -
Bake the Cake:
Grease an 8-inch round cake pan with butter or cooking oil and dust with a little flour.
Pour the cake batter into the pan and bake for 30 to 35 minutes. The cake is done when a skewer inserted into the center comes out clean.
Let the cake cool in the pan for 5 minutes before transferring it to a wire rack to cool completely. -
Poke the Cake:
Once the cake has cooled, use a chopstick or a wooden spoon handle to poke holes all over the cake to create spaces for the jelly to soak in. -
Prepare the Jelly:
In a separate bowl, dissolve the jelly mix in 1 cup of boiling water. Stir until fully dissolved. -
Soak the Cake:
Carefully pour the jelly mixture over the cooled cake, ensuring it fills the holes. Cover the cake and refrigerate for at least 3 hours to allow the jelly to set. -
Make the Frosting:
In a mixing bowl, combine powdered sugar, milk, unsalted butter, and vanilla extract. Whisk until smooth and creamy. -
Top the Cake:
Once the jelly has set, spread the frosting over the top of the cake. Garnish with chopped walnuts and pecans for an added crunch and flavor.
Enjoy your delicious and colorful Jello Poke Cake, the perfect sweet treat for any occasion!
