Instructions
Step 1: Start by filling a large pot with water and bringing it to a boil. This will be used for cooking the pasta later on.
Step 2: Prepare the vibrant color creams:
- Green Cream: Wash the spinach thoroughly under running water. Place it in a saucepan with a lid, and cook the spinach until tender. Once cooked, remove from heat, and transfer the spinach into a blender. Blend it until smooth and creamy. Transfer the green cream into a spacious bowl. Season with salt to taste, and add a pinch of grated nutmeg. Stir well to combine.
- Red Cream: Take the pre-cooked beets and cut them into slices, then into strips, and finally into cubes. Add the beet cubes into the blender. From the pasta boiling water, take about 30g of water and add it into the blender along with a drizzle of olive oil and salt to taste. Blend until smooth and creamy. Transfer the red cream into a bowl.
- Yellow Cream: Place a fine mesh sieve over a bowl, and sift the ricotta cheese, pressing it with the back of a spoon. Once sifted, stir in the saffron and salt to taste. Mix well until the ricotta is evenly colored and smooth.
Step 3: By now, your color creams are ready, and the water for the pasta should be boiling. Add salt to the water and cook the mini wheels pasta according to package instructions.
Step 4: Once the pasta is cooked, drain it and combine with the prepared colorful creams. Serve it immediately, arranging each color separately on the plate for an extra visual appeal.
