Instructions

  1. Prepare Idli Batter: Start by ensuring your idli batter is ready. You can opt for store-bought batter or prepare your own using a homemade idli dosa batter recipe.

  2. Make Pumpkin Puree: In a pressure cooker, combine the cubed pumpkin with 1/4 cup of water. Close the lid and cook for 2 whistles. Once cooked, allow the pressure to release naturally. Open the cooker, let it cool, then transfer the pumpkin and any remaining water to a mixer jar and blend into a smooth puree without adding extra water.

  3. Combine Ingredients: In a mixing bowl, combine the pumpkin puree with grated carrots and the idli batter. Mix well until all ingredients are thoroughly combined.

  4. Steam Idlis: Preheat your idli steamer with water and generously grease the idli plates with oil or ghee. Pour a ladle full of the batter into each cavity. Place the plates in the steamer and steam for 10-12 minutes.

  5. Check for Doneness: After 12 minutes, insert a greased knife into the idlis. If it comes out clean, your Healthy Pumpkin Carrot Idlis are ready. Turn off the flame and carefully remove the idli plates from the steamer.

  6. De-mould and Serve: Allow the idlis to sit for a couple of minutes before de-moulding. Drizzle with ghee and serve hot.

  7. Accompaniments: For an authentic South Indian breakfast experience, serve these idlis with Coconut Chutney, Karnataka Style Ranjaka (Red Chili Chutney), and Tomato Upma. Finish off your meal with a cup of South Indian Filter Coffee for the ultimate culinary delight.

Enjoy the nourishing taste of these Healthy Pumpkin Carrot Idlis, making your mornings both delightful and wholesome!
