Ingredients:

  • 4 tbsp olive oil
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 small red onion, diced
  • 1 garlic clove, minced
  • 2 tsp ground fennel
  • 1 tsp dried basil
  • 1 cup fat-free chicken broth
  • 2 cups vegetable broth
  • 4 large roasted red peppers, peeled and seeded

Instructions:

  1. Prepare Roasted Red Peppers:

    • Preheat broiler. Cut peppers in half, remove seeds, and place cut-side-down on a foil-lined, sprayed baking sheet.
    • Broil peppers 3 inches from heat for about 12 minutes or until skin is blackened.
    • Remove from oven and place in a ziplock bag, sealing for 15 minutes to steam. Peel off skin when cool enough to handle.
  2. Prepare Sauce:

    • Heat olive oil in a large saucepan over medium heat. Add diced carrot, celery, red onion, garlic, ground fennel, and dried basil. Sauté for 5 minutes until vegetables are softened.
  3. Cook Vegetables:

    • Add fat-free chicken broth and vegetable broth to the saucepan. Cover and simmer over medium heat for 20 minutes, or until vegetables are tender.
  4. Blend Sauce:

    • Transfer the roasted red peppers and sautéed vegetable mixture to a food processor fitted with a steel blade. Process until smooth.
  5. Adjust Seasoning:

    • Taste the sauce and adjust seasoning as desired with salt and pepper.
  6. Serve:

    • Pour the sauce over cooked pasta of your choice. Garnish with fresh herbs if desired.
  7. Storage Tips:

    • If making large batches, the roasted red peppers can be frozen when in season to streamline future sauce preparations. The completed sauce also freezes well.

Additional Tips:

  • Make Ahead: Roasting and peeling the peppers ahead of time can save preparation time when making the sauce.
  • Freezing: Both the roasted peppers and the completed sauce can be frozen for future use, maintaining their quality well.

This Roasted Red Pepper Sauce is not only delicious but also versatile, offering a burst of color and flavor to any pasta dish. Its health benefits and ease of preparation make it a wonderful addition to your culinary repertoire.
