Description:

Green Papaya Salad, known as Goui in Vietnamese cuisine, is a refreshing and vibrant dish that celebrates the flavors of Southeast Asia. Traditionally made with shredded green papaya and an array of aromatic herbs, this salad is topped with cooked meat, shrimp, or beef jerky and dressed with a tangy fish sauce dip. It’s a delightful medley of textures and tastes, perfect for a light lunch or as a side dish.

Ingredients:

  • 1 green papaya
  • 1/2 cup shrimp
  • 1/2 cup fresh Asian basil
  • 3 sprigs of mint
  • 3 tablespoons roasted peanuts
  • 1/2 clove garlic
  • Juice of 1 lime
  • 1 tablespoon rice vinegar
  • 2 teaspoons sugar
  • 2 tablespoons fish sauce
  • 4 cups water
  • 1 hot red chili pepper
  • 1 red chili pepper
  • Fish sauce (for the dip)

Instructions:

  1. Prepare the Ingredients:

    • Wash the shrimp with salted cold water. Drain and set aside.
    • Boil water in a medium saucepan. Add the piece of pork and simmer over medium heat for at least 30 minutes until cooked through. Drain and set aside. When cool, julienne cut into long thin 2-inch strips.
    • In another saucepan, boil water. Cook the shrimp for 5 minutes, then drain, split in half, and set aside.
    • Soak the shredded green papaya in a large bowl of cold water with 1 teaspoon of salt. Let it sit for 10 minutes, then rinse and drain well. Use a cheesecloth to squeeze out excess water.
  2. Assemble the Salad:

    • In a large bowl, combine the shredded papaya, cooked pork, and shrimp (reserve a few shrimp for garnish).
    • Prepare the fish sauce dip by mixing lime juice, rice vinegar, sugar, and fish sauce. Adjust the seasoning to taste.
    • Toss the salad with the fish sauce dip until well combined.
  3. Serve:

    • Arrange the salad on a plate and top it with the reserved cooked shrimp.
    • Sprinkle with fresh coriander, basil, or mint, and chopped peanuts for added flavor and texture.
    • Serve with shrimp crackers on the side for a delightful crunch.
  4. Variations:

    • For a different twist, use finely shredded beef jerky instead of pork and shrimp. The rest of the preparations remain the same.
