Ingredients:

2 Cabbage
1 Apple
3 Sugar
1/2 Butter
2 Salt
1 Milk
1 Vinegar
1 Cayenne pepper
1/8 Dry mustard
3 Salt (additional)

1 1/2 Flour
1 1/2 Paprika
1 1/2 Cayenne pepper (additional)
1 Egg
1 Milk (additional)
1 Vinegar (additional)
4 Butter (additional)

Instructions:

  1. Prepare the Slaw:

    • Start by finely shredding the cabbage and crisping it in cold water.
    • Dry the crisped cabbage and combine it with the optional diced apples, if desired.
    • Add about 1/3 cup of either Slaw dressing or Cooked Salad dressing.
  2. Serve:

    • Serve the coleslaw warm or chilled.
  3. Optional Hot Slaw:

    • If you prefer hot slaw, omit the apples and crisping step.
    • Boil the cabbage in slightly salted water until tender.
    • Serve with either of the listed dressings while they are still warm and the cabbage is hot.
  4. Prepare Slaw Dressing:

    • Mix egg yolks, sugar, butter, salt, cream or milk, vinegar, and cayenne pepper in a bowl.
    • Beat well.
    • Beat egg whites stiff and fold them into the mixture.
    • Cook in a double boiler until thickened.
  5. Prepare Cooked Salad Dressing:

    • Mix mustard, salt, sugar, flour, paprika, and cayenne pepper in a separate bowl.
    • Add egg and mix thoroughly.
    • Add milk and vinegar.
    • Cook over hot water (double boiler), stirring frequently, until thick.
    • Add butter and continue cooking and stirring until melted.
