Ingredients:

4 Chicken pieces
4 tbsp Butter
2 cloves Garlic
1 1/2 tsp Black pepper
1 tsp Paprika
1/2 tsp Thyme
1/2 tsp Oregano
1/2 tsp Parsley
1/2 tsp Garlic powder
1/2 tsp Bay leaf
1/4 – 1/2 tsp Salt
1/2 tsp Tabasco sauce
1/2 tsp Brown sugar
2 tbsp Tomato paste
3 Scallions (sliced)

Instructions:

  1. Saute Chicken: In a skillet, saute chicken pieces in butter and minced garlic until the chicken and garlic are nicely browned.

  2. Preheat Oven: Preheat the oven to 350ยฐF (175ยฐC).

  3. Prepare Voodoo Rub: In a small bowl, combine black pepper, paprika, thyme, oregano, parsley, garlic powder, crushed bay leaf, crushed dried chile (adjust according to your heat tolerance), salt, Tabasco sauce, brown sugar, and tomato paste to make the voodoo rub.

  4. Coat Chicken: Remove the chicken from the skillet and coat it evenly with the voodoo rub mixture. Ensure each piece is well coated.

  5. Bake: Place the seasoned chicken in a baking dish, cover it, and bake in the preheated oven for 45 minutes to 1 hour. The cooking time may vary depending on the size and type of chicken pieces used.

  6. Grill Option: Alternatively, after sauteeing with garlic, this chicken can be grilled with the voodoo rub. Adjust grilling time accordingly.

  7. Serve: Serve the voodoo child chicken with plain white rice spiked with sliced scallions for a flavorful accompaniment.
