Yield: 2 loaves

Ingredients:

Quantity Ingredient
3/4 cup Brown sugar
1/2 cup Butter
2 Eggs
1 cup Molasses
1/2 cup Boiling water
1/2 tsp Baking soda
2 3/4 cups All-purpose flour
2 tsp Baking powder
1 tsp Ginger
1 1/2 tsp Cinnamon
3/4 tsp Allspice
3/4 tsp Clove
1/2 tsp Salt
1/2 cup Powdered sugar
1 – 2 tbsp Milk

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C).

  2. Prepare pans: Grease two 9 x 5-inch loaf pans and set them aside.

  3. Cream sugar and butter: In a mixing bowl, cream together the brown sugar and butter until light and fluffy. Then, add the eggs and mix well.

  4. Prepare molasses mixture: In a separate bowl, stir together the molasses, boiling water, and baking soda until well combined. Add this mixture to the creamed sugar mixture and stir until fully blended.

  5. Incorporate dry ingredients: Gradually add the remaining dry ingredients (flour, baking powder, ginger, cinnamon, allspice, clove, and salt) to the batter, beating after each addition. Alternate adding the dry ingredients with the flour.

  6. Divide batter: Divide the batter evenly between the two prepared loaf pans.

  7. Bake: Place the pans in the preheated oven and bake for 40-50 minutes, or until the loaves spring back when lightly touched in the center.

  8. Cool: Remove the pans from the oven and let the loaves cool in the pans for 15 minutes on a wire rack. Afterward, carefully remove the loaves from the pans and allow them to cool completely on wire racks.

  9. Prepare glaze: In a small bowl, mix together the powdered sugar and milk to create a glaze. Add the milk gradually until the glaze reaches a drizzling consistency.

  10. Glaze and serve: Once the loaves have cooled completely, spread the glaze evenly over the top of each loaf.

  11. Storage: Store the gingerbread in an airtight container in the refrigerator for maximum freshness.

Now, sit back, relax, and savor each bite of this moist and flavorful gingerbread. Whether enjoyed with a cup of hot cocoa on a chilly winter evening or shared with loved ones during the festive season, this recipe is sure to become a favorite in your household. Happy baking! 🍞🎁
