Ingredients:

2 Eggs
3/4 cup Sour cream
1/4 tsp Salt
1/4 tsp Baking powder
1/2 cup All-purpose flour
1 Potato
2 3/4 cup Sharp cheddar cheese
3 Onions
1 Green onion
1/4 tsp Salt
1/2 tsp Black pepper

Instructions:

Dough Preparation:

  1. In a medium mixing bowl, whisk together eggs, sour cream, whipping cream, and salt until well blended.
  2. Gently stir in baking powder.
  3. In a large mixing bowl, combine flour and the egg mixture, mixing well until incorporated.
  4. If needed, add more flour to prevent sticking.
  5. Form the dough into a ball and knead about 10 times.
  6. Divide the dough in half, shape into balls, cover with a damp cloth, and set aside.

Filling:

  1. Cook the potato in a medium saucepan until tender; drain and mash.
  2. Mix in grated cheddar cheese, onions, salt, and pepper until well combined.

Assembly:

  1. Roll out each dough ball on a floured surface to about 1/16 inch thickness.
  2. Using a 4 or 5-inch mini form, place the dough inside with edges hanging over.
  3. Spoon 1-2 tablespoons of filling into the center.
  4. Fold the form over, squeezing to seal the edges.
  5. Trim excess dough and set aside for later use.
  6. Alternatively, without a mini form, place filling in the center of rolled dough, fold over, and crimp edges with a fork dipped in flour.

Cooking:

  1. Bring a pasta cooker or large pot of water to a boil, adding olive oil and salt.
  2. Drop in formed voreniki, stirring once to prevent sticking.
  3. Cook for about 2 minutes until they rise to the surface.
  4. Remove with a slotted spoon and place in a bowl.
  5. Optionally, coat with melted butter.

Serving and Storage:

  1. Serve immediately with melted butter, sour cream or yogurt, and chopped green onions.
  2. To reheat, boil for 1 1/2 minutes or fry in butter until golden brown.
  3. Freeze extra voreniki on a tray before storing in bags.
