Instructions

  1. Begin by chopping the white chocolate into large pieces. Place it in a heatproof bowl.
  2. Melt the white chocolate either in the microwave or using a double boiler method. Once the chocolate has melted, add the butter (cut into small cubes) and heat for a few more seconds until the butter is fully melted. Stir everything well using a spatula.
  3. In a separate bowl, combine the eggs with the powdered sugar. Whisk the mixture with an electric hand mixer for a couple of minutes until it becomes light and fluffy.
  4. Once the egg mixture is fluffy, add the melted chocolate and butter mixture, continuing to whisk to incorporate everything smoothly.
  5. Scrape the seeds from the vanilla bean pod and add them to the bowl, along with the almond flour. Mix well with the electric mixer until fully combined.
  6. Grease five small aluminum ramekins with butter. Sprinkle a teaspoon of brown sugar into the center of each ramekin for an extra touch of sweetness and to help the cakes release easily.
  7. Pour the prepared batter evenly into the ramekins, filling each about three-quarters full.
  8. Preheat the oven to 180ยฐC (350ยฐF) with static heat. Bake the lava cakes for 16 to 17 minutes. The edges should be set, but the center should still be soft and molten.
  9. Once baked, carefully remove the cakes from the oven. Let them sit for a minute or two before gently inverting them onto serving plates. Serve immediately and enjoy the gooey, indulgent white chocolate center.
