Ingredients
- 1/2 cup butter
- 2 tablespoons margarine
- 2 cups white chocolate chips
- 1/2 cup eggs (approximately 2 large eggs)
- 1 cup sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon almond extract
- 1/2 cup raspberry jam
- Slivered almonds for garnish
Instructions
-
Preheat oven: Preheat your oven to 325°F (165°C). Prepare a 9-inch square baking pan by greasing it lightly.
-
Melt butter and chocolate chips: In a microwavable bowl, melt the butter on HIGH for about 1 minute. Stir in 1 cup of white chocolate chips until smooth. Allow the mixture to stand without stirring.
-
Prepare the batter: In a large mixing bowl, beat the eggs until foamy. Gradually add the sugar and continue beating until the mixture becomes light and lemon-colored, about 5 minutes.
-
Combine ingredients: Stir the melted butter and chocolate mixture into the beaten eggs and sugar. Add the flour, salt, and almond extract, and mix at low speed until well combined.
-
Spread batter: Spread about 2/3 of the batter evenly into the prepared baking pan.
-
Bake first layer: Bake the first layer of batter for 15 to 17 minutes, or until it turns light golden brown around the edges. Remove from the oven and place it on a wire rack to cool slightly.
-
Prepare jam topping: While the crust is still warm, heat the raspberry jam in a small microwavable bowl on HIGH for 30 seconds. Stir well to loosen it up.
-
Spread jam: Spread the warm raspberry jam evenly over the warm crust.
-
Add remaining batter: Stir the remaining white chocolate chips into the remaining batter. Drop spoonfuls of this batter over the jam layer.
-
Garnish and bake: Sprinkle slivered almonds over the top of the batter. Return the pan to the oven and bake for an additional 25 to 30 minutes, or until the edges are nicely browned.
-
Cool and cut: Allow the bars to cool completely in the pan on a wire rack. Once cooled, cut them into individual bars.
-
Serve: Serve these delightful Razberi Bars as a sweet treat for dessert, a snack, or bring them to potlucks and holiday gatherings to impress your friends and family!
