Whole Wheat Flatbreads with Stracchino, Prosciutto, and Figs

Category: Yeast-Based Breads
Servings: 6

Ingredients

Ingredient Quantity
Whole wheat flour 125g
All-purpose flour 125g
Water 160g
Extra virgin olive oil 40g
Fine salt 5g
Instant yeast for savory preparations 5g
Fresh rosemary 1g
All-purpose flour (for rolling) 25g
Stracchino cheese 80g
Prosciutto crudo (cured ham) 80g
Fresh figs 2
Walnut halves 20g
Ground black pepper A pinch
Fresh thyme To taste

Instructions

  1. Prepare the dough: In the bowl of a stand mixer, combine both flours, salt, fresh rosemary (finely chopped), and instant yeast. Start mixing on a low speed. Gradually pour in the olive oil and water, continuing to mix until a dough forms.
  2. Knead the dough: Once the dough comes together, knead it for a few minutes until smooth and elastic. This step can be done either in the mixer or by hand on a clean surface.
  3. Roll out the dough: Dust your work surface lightly with some all-purpose flour. Roll the dough into a rectangle or circle until it reaches a thickness of about 8mm (approximately 1/3 inch).
  4. Shape the flatbreads: Use a round cutter (about 11 cm in diameter) to cut out the flatbreads.
  5. Cook the flatbreads: Lightly grease a frying pan with olive oil, spreading it evenly using a brush. Heat the pan over medium-low heat. Add the flatbreads and cook for about 5 minutes on one side, then flip them over, pricking the top with a fork to allow air to escape and cook for another 5 minutes until golden brown and crispy.
  6. Prepare the toppings: While the flatbreads are cooking, slice the figs into quarters. Cut the prosciutto into thin slices.
  7. Assemble the flatbreads: Once the flatbreads are cooked, spread a generous layer of stracchino cheese on top. Add a slice of prosciutto crudo and a few pieces of fig. Garnish with walnut halves and fresh thyme leaves for a burst of flavor.
  8. Serve: Lightly season the flatbreads with a pinch of freshly ground black pepper before serving. Enjoy your whole wheat flatbreads warm and crispy, perfect as a savory snack or appetizer.
