Instructions

  1. Prepare the Artichokes:
    Start by preparing the artichokes. It’s best to wear gloves or rub your hands with lemon to prevent them from darkening when handling the artichokes. Begin by removing the tough outer leaves of the artichoke, working your way towards the tender heart. Trim the stem and peel off the fibrous outer layer using a vegetable peeler. Cut off the thorny top of the artichoke. You should be left with about 350g of cleaned artichokes.

    Cut the artichokes in half and place them in a bowl filled with acidulated water (water mixed with lemon juice) to prevent them from turning brown while you prepare the other ingredients.
